Ingredient Information (with Alternative Suggestions)

Banana

Use ripe banana for sweetness; the riper it is, the sweeter the pancake.

Rolled Oats

I used rolled oats, but quick oats or oat flour can also be used. Note that the cup size will differ while the gram amount remains unchanged.

Egg

No egg replacement has been tested.

Greek Yogurt

Can be replaced with yogurt of choice or even cottage cheese,

Cinnamon and Vanilla Extract

Added for flavour; these can be skipped if preferred.

Baking Powder

Helps lighten the texture.

Oil for frying

Use your favourite, coconut oil compliments the flavours but olive oil or avocado oil will also work. Alternatively, you can use unsalted butter.

Step by Step Instructions (with images)

  • Place all ingredients, apart from the blueberries and oil, in a blender and blend until smooth.
  • Roughly chop the blueberries and gently fold them into the batter.
  • Heat a nonstick skillet/frying pan over medium heat and add a small amount of oil or butter to grease the pan. Reduce to medium-low heat and spoon small amounts of pancake batter onto the pan to form small circles.
  • Cook until little bubbles start to form on the top of the pancakes, around 1-2 minutes, then carefully flip them over and cook for a couple more minutes until both sides are golden brown.
